Tonight's meal!

So after yesterday and my meal-making ordeal, mom decided to let me make another dish tonight! Hasn't come out of the oven yet, but will post again once i've tasted it!

Loaded Baked Potoato Hash Brown Casserole
Ingredients:
1 bag Frozen "Country Style" Hash browns (the shredded kind)
1 (8 ounce) carton Sour Cream
1 (8 ounce) package Cream Cheese
4 Slices bacon, crumbled
1 Package Cheddar cheese
1/2 cup Butter

Directions:
Preheat oven to 350 degrees. Thaw potatoes. Combine soup, sour cream, softened cream cheese, 1/4 cup melted butter, bacon bits, chives and cheese. Mix in potatoes. Spray 3 quart casserole dish with Pam and add mixture. Mix remaining 1/4 cup melted butter and crumbs and sprinkle on top. Bake 1 hour.

AH-mazing Cheesy Chicken & Rice Casserole

So I made this last night for mom and me....She had seconds, and maybe even thirds. In other words, she liked it, and I personally thought it was pretty good as well. Found it on Pinterest (love that place) and decided to make it. So I decided to put the recipe on here! Hope ya'll enjoy!

Cheesy Chicken and Rice Casserole
Ingredients:
1 Package Chicken tenders (or 2 breasts would work)
4 cups Cooked Brown Rice (I used Ready Rice!)
¾ cups Frozen Corn
15 ounces, fluid Can Black Beans, Drained And Rinsed
1 cup Sour Cream
½ cups Salsa
1 cup Low-fat Cheddar Cheese, Plus More For Topping
2 Tablespoons Fresh Cilantro For Garnish

Instructions:
Preheat oven to 350F. Cook chicken in skillet, seasoned with salt and pepper, and a little garlic salt. In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine. Make sure the sour cream and cheese are stirred in throughout the entire bowl. Season with salt and pepper if desired. Transfer to an oven-safe dish and top with extra cheese if you would like. Bake for 20-25 minutes, or until heated through. Garnish with chopped cilantro.

That old dream...

So, I found out last week that I was accepted to the University of Kentucky! Finding out was hilarious. It feels so good to finally become a Wildcat! Now, I have to figure out where I what I want to do for housing, and find a roommate so any future Wildcats out there, find me! So excited for next year, I'm so ready for the next 4 years of my life!
